Baked French Toast Recipe [13-12-15]
Baked French Toast
Ingredients:
1 loaf firm bread, cubed
8 ounces cream cheese, cubed
10 eggs
1-1/2 cups half-and-half
1/2 cup (1 stick) butter, melted
1/4 cup maple syrup
Directions:
Arrange half the bread cubes in a 9x13-inch baking pan sprayed with nonstick cooking spray. Layer with the cream cheese and remaining bread cubes.
Whisk the eggs, half-and-half, butter and maple syrup in a bowl until blended. Pour the egg mixture over the prepared layers, pressing the bread cubes to ensure even coverage. Chill, covered with plastic wrap, for 8 to 10 hours. Bake at 350 degrees for 40 to 50 minutes or until set. Serve with jam, confectioners' sugar and/or syrup.

French Toast recipe [15-9-15]
French Toast
Ingredients:
10 – 12 slices stale French bread
5 eggs
2 teaspoons vanilla
1/2 cup sugar
Cooking oil
Confectioner's sugar
Directions:
Slice the French bread before it is stale, otherwise the crust crumbles and the bread slices lose the crust. Mix eggs, vanilla, and sugar. Place one slice of stale bread in the egg batter until the bread has "soaked up" the batter, about 15 minutes. Then fry the soaked slices on hot, oiled griddle. Fry the bread about 2 minutes on each side. Remove and sprinkle with confectioner's sugar and serve while warm.

Couche-Couche
Ingredients:
1/4 cup vegetable oil
2 cups corn meal
3/4 cup flour
1 Tablespoon baking powder
1 teaspoon salt
1 cup water
1/2 cup milk
Directions:
Heat oil in 10 inch black iron pot. Mix all dry ingredients. Add water and milk – being sure it is not too dry (it will be thick). Put into hot oil, cover to steam and form a crust (about 10 minutes). Uncover and stir, and break into small pieces. Lower heat, stir frequently while cooking the next 15 minutes. Serve with cold milk as a cereal.

Oatmeal Waffles 21-07-15
Oatmeal Waffles
Ingredients
2 eggs, beaten
2 cups buttermilk
1 cup quick-cooking oats
1 tablespoon molasses
1 tablespoon vegetable oil
1 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
Milk
Directions
In a large bowl, mix eggs and buttermilk. Add oats and mix well. Stir in molasses and oil. Combine flour, balking soda, baking powder and salt; stir into the egg mixture. If batter becomes too thick, thin with a little milk. Pour about 3/4 cup batter onto a greased preheated waffle maker. Bake according to manufacturer's directions. To make pancakes: Drop batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles begin to form on top of pancake.
