Insalata Tricolore

Ingredients

2 bunches arugula, trimmed, washed and dried
2 heads endive,washed, dried and sliced
1 head radiccio, washed dried and chopped
1/2 cup extra virgin olive oil
3 tablespoons Italian-style red wine vinegar
Salt to taste

Directions

Combine arugula, endive and radiccihion in a large bowl. Drizzle oil and vinegar over the salad and season with salt. Toss.
